Besan Milkmaid Burfi Recipe – Easy and delicious Indian sweet made with gram flour, condensed milk, cardamom and nuts.
What is besan milkmaid burfi?
It is an Indian sweet or fudge prepared with besan or gram flour, sweetened condensed milk, cardamom and nuts. There are many traditional burfi recipes and this one is the easier among them all. It is rich, delicious and easy to make during festivals such as Diwali, Rakha Bandhan and Holi. The texture of the burfi will be slightly hard and it is delicately flavored with cardamom.
How long can I store them?
They stay well for a few days at room temperature.
Step by step preparation:
Heat 4 tablespoons of ghee or clarified butter in a heavy-bottomed pan.
Add 1 cup of chickpea flour or gram flour to the pan and mix well.
Keep on stirring and roast for 10 minutes on a low flame, till nice aroma comes out of it.
Add cardamom powder and measured condensed milk and mix until well combined.
Keep stirring and cook for a couple of minutes or until it forms a thick mixture.
Remove the pan from the flame and let the mixture cool down a bit.
When it is still warm add powdered sugar and knead until soft and combined.
Transfer the mixture into a greased tray or tin and garnish with chopped almonds and pistachios.
Cut into desired shapes.

Great recipe. As usual I modified like I do with almost every recipe I try. I added and stirred in quite a bit of dry fruit before adding condensed milk (raisins, almonds, pumpkin seeds, flax seeds etc). Did not use sugar but added a tbs Honey to make it soft as my extra ingredients were making it too dry. Net result, amazing. Thanks for the recipe. Will be used quite often. Easy and taste to die for.

A popular method of making Burfi is with condensed milk. This negates the requirement to add sugar, since the condensed milk is sweet enough. Many recipes simply call for milk powder and condensed milk. While this is a perfectly delicious way to make burfi, the end result is very smooth and Peda like in texture.
Your best bet for Indian sweets made from condensed milk is ladoo, kheer, peda and burfi which are all instant recipes and need literally half the time and effort to make as compared to the traditional ones.
There are two reason for this, either it is not completely cooked or you had put that burfi mixture on flame while cooking for more than the required time after adding sugar into it.
Condensed milk is a good source of these nutrients in addition to calcium, vitamin D, vitamin B12, vitamin A, riboflavin, phosphorus, and protein. These nutrients are necessary for healthy teeth and bones, a robust immune system, and a cardiovascular system.
Using sweetened condensed milk to boost calorie content may be more beneficial than using sugar alone since the product also provides extra protein, fat and some bone-healthy minerals like calcium and phosphorus.
Barfi or burfi is a milk-based sweet from the Indian subcontinent with a fudge-like consistency. Its name comes from the Persian and Urdu word (barf) for snow. Barfi is consumed throughout India and Pakistan and is especially popular in North India.
Texture: Kaju katli has a fudgy and smooth texture due to the rich silver leaves. It is typically thin, flat, and diamond-shaped. Kaju barfi, on the other hand, has a slightly grainy and crumbly texture due to the addition of milk solids (khoya). It is usually thicker and cut into square or rectangular shapes.
Kalakand is a popular Indian sweet made with milk, sugar and a few flavorings. My three ingredient, super fast recipe for Kalakand (a.k.a. Indian Milk Cake) comes together in just 15 minutes thanks to the help of a can of sweetened condensed milk.
Gulab Jamun came to the country from past Persia (Iran) when Muslim rulers began showing up in India and laying out their lines here. These desserts are made of khoya, which is a ball-formed milk powder. The khoyas are broiled and dunked in a sweet syrup, which is typically seasoned with saffron and rose water.
It is easy enough to make and being able to judge when exactly to pour the burfi mixture onto the greased tin/ plate is critical. If the mixture is not thickened enough at this point, the result will be a chewy burfi which doesn't quite set. If the mixture is overcooked, then the burfi becomes dry and a bit hard.
Here's a general guideline: Milk-based sweets: Sweets like Rasgulla and Sandesh typically last 2-3 days when stored in the refrigerator. Dry sweets: Dry sweets like Barfi and Chikki can last up to 2 weeks when stored in an airtight container in a cool, dry place.
Peda is made with the same base as burfi, but with cardamom and saffron. The dough is then flattened with a thumbprint in the middle, and filled with pistachio or almond. A thumbprint cookie in appearance and fudge-like in texture, peda are little coins that start with the same base as burfi.

Sugar: Sweetened condensed milk is about 45 percent sugar, while evaporated milk is unsweetened. Consistency: Sweetened condensed milk is thick and gloppy, whereas evaporated milk is thin and easily poured in a stream. Little if anything would stick to the side of the can.
