Chicken Kebab

I recently tried this recipe and kind of addicted to it, because it turned out to be very delicious. It was spicy, tangy, juicy and smoky, everything you want a kebab to be.

The marination for this is really simple but the flavours works together great. I love the juiciness of the chicken and the taste is just wonderful. It is tangy and a little spicy from the chilli flakes and the aroma of the coriander leaves was so good. I love the char grill marks you get from the grill pan.

Kebab is a type of cooked meat dish that originated in Middle Eastern cuisines. Many variations are popular all over the world. Kebabs are made up of cut up or ground meat, sometimes with vegetables, and various other accompaniments depending on the recipe.

Although kebabs are typically cooked on a skewer over a fire, some kebab dishes, such as tas kebab, are baked in a pan in an oven or prepared as a stew. The traditional meat for kebabs is mutton or lamb, but regional recipes may include beef, goat, chicken, fish, and occasionally pork depending on religious restrictions. Some of the popular chicken kebab is this minced kebab which is similar to a patties.

Chicken: Chicken breasts are prone to drying out when overcooked, so they should be cooked quickly over high heat. Cooking chicken breasts in a skillet, stir-frying, roasting/baking, or grilling are the best options.For more juicy kebab you can use chicken thighs instead of chicken breast.

Lemon Juice - Tenderizing chicken with acid is easy, and citrus always works. Freshly squeezed lemon or lime juice can give your meat a kick thats ideal for grilling season or Tex-Mex cuisine.

Garlic - Garlic has a distinct, pungent flavour making it ideal for seasoning dishes. The aroma of garlic with chicken goes well together.

Red Chilli Flakes - I added chilli flakes in this recipe for heat. You can add more or less as per your taste.

Sugar - a tiny bit of sugar helps with the caramelization of the chicken which makes it super tasty.

Coriander leaves - along with garlic, coriander adds a subtle flavour to your dishes.

Once marination is done. Skewer the chicken. Place it in a cast iron pan, drizzle with some olive oil. Place the cast iron pan straight into the 250 degree C preheated oven and bake for 10 to 12 minutes on the top rack. Flip the chicken in between for even baking.

Chicken Kebab on Grill

You can barbeque chicken kebab in open grill. Just place it in a greased barbeque and cook for couple of minutes on each side. Make sure you cook it on medium heat. Make sure you base the chicken with butter and extra lemon juice.

Marinating Chicken

1)Take boneless chicken in a bowl. I used chicken breast and cut into bite size cubes. You can use chicken thigh.

2)Add in lemon juice or vinegar over the chicken.

3)Add in some olive oil. You can use any oil of choice.

4)Add in grated garlic or minced garlic.

5)Add in chopped coriander leaves. Make sure you chop the coriander leaves or parsley finely.

Skewer the Chicken

10)Next day lets skewer the chicken. I used bamboo skewers, you can use metal skewers too.

Cooking Chicken Kebab

13)I placed the chicken on a grill pan and cooked on medium high heat for 2 or 3 minutes.

Ingredients

  • 2 medium Boneless Skinless Chicken Breast cut into cubes (around 500 grams)

For Marination

  • ¼ cup Lemon Juice
  • 3 tbsp Olive Oil
  • 6 cloves Garlic minced
  • 4 tbsp Coriander leaves finely chopped
  • 2 tsp Sugar
  • 1 tbsp Red Chilli Flakes
  • 1 tsp Salt to taste

Instructions

  • Take chicken in a bowl, add all the marination ingredients and mix well. Leave it to marinate for 1 to 2 hours.

  • Now skewers this in a bamboo skewer and place it on a preheated grill pan. Cook for 3 to 4 mins on one side and flip over and cook for another 3 mins on other side. Serve hot.
