A lot of people think food blogging is an easy job. You get to stay home and cook/bake all day long. How hard could that be, right?

Wrong!

It’s not all pretty desserts or easy dinners as it leads you to believe.

On the other side of the screen is someone who’s working countless hours testing recipes day in and day out, improving photography skills or trying to keep up with the latest social media network.

The prep time specified on the recipe card, may it be 15, 30 or 60 minutes, doesn’t show how many times that recipehas been made before making its appearance on the blog.

You don’t know this is my 4th pie in less than 2 weeks.

You don’t know I took 162 photos just so I can have less than 10 added to this blog post.

And it’s not your fault. We rarely admit when making mistakes in the kitchen.

But what we do tell you is why some of the ingredients are necessary in a recipe and yet, some readers glance over the entire blog post saving just the recipe and later complaining it’s my fault when the recipe fails.

It happens all the time. One of the recent emails I received was asking if anyone besides me made these dinner rolls. A quick read through the comments and you find feedback from people who have made the rolls.

Another pet peeve of mine is ingredient substitution. Making a soup may not be a science, but dessert making is.

When I list the ingredientsI used, I don’t do it just for the pretty recipe card, but because it makes a world difference when recreating it.

Yes, the recipe might turn out when using something else, but it’s not the same.

No, the recipe will not turn out when leaving an ingredient out.

Now, if you’re serious about making this no-bake strawberrychocolate pie, keep reading and you’ll find out why it took me 4 tries and how you canskip all that misery.

There are only a few ingredientscalled in this no-bake strawberry chocolate pie recipe.

Oreo cookies, butter, baking chocolate, heavy cream, cream cheese, lemon juice, sugar and fresh strawberries.

The crust is a homemade Oreo crust. Oreo cookies and butter is all you need. I have made two of my pies with store-bought Oreo crust and you can too, but it’s cheaper to buy a package and make your own crust. It only takes 2-3 minutes.

If you’re using a homemade pie crust, it’s very important to refrigerate it. Skipping this step will result in a crumblycrust when cutting the pie.

Another trick to keep the pie and strawberries in place is to spread a thin layer of melted chocolate over the pie crust. It’s just baking chocolate and heavy cream, nothing fancy, but makes a huge difference.

Once set, the strawberries won’t dance around making it easier to clean cut the pie slices.

The filling – dreams should be made out of it!

The filling gave me the most headaches but I’m finally victorious.

For a no-bake pie filling, it requires a little bit of patience but the results are so worth it.

Part of the filling is made using bain marie technique. What that means in plain English is you’re cooking the filling on top of a saucepan with boiling water.

Add roughly chopped baking chocolate and butter in a heatproof bowl. Place over a pan of simmering water and allow the chocolate and butter to melt, stirring occasionally. Add in the cream cheese and continue to stir until smooth.

Heating up the cream cheese is new to me and happened by accident one afternoon while not having enough patience to let the chocolate cool down before mixing it with the cream cheese.

I love it! It stops me from taking out the stand mixer to beat the cream cheese until smooth and soft. (less dirty dishes!) and the cheese and chocolate blend in faster. Definitely, will be using it in future recipes.No-bake strawberry chocolate pie recipe (7)

Now, once the cheese is blent in, it’s very important to follow the next two steps to the T.

Remove the mixing bowl from the heat and quickly stir in the lemon juice. Why lemon juice? Well, it’s because the citric acid from the juice combined with the cream cheese will make the filling set. It’s the basic rule for no bake cheesecake and the same rule I used in these no bake dreamsicle pie bars.

Because the mixture is warm, if you don’t mix the juice in quickly it will start to curdle.

After the juice is stirred in, add in the powdered sugar. I love Imperial Sugar in my recipes since their sugar blends in so fast compared to other brands I’ve tried.

Let the filling cool for 20-30 minutes in the fridge. It’s very important to have it chilled before folding in the whipped cream otherwise your filling will be a puddle and not fluffy and dreamy as it’s supposed to be.

Spread the filling over the strawberries and finish the pie with grated chocolate.

The grated chocolate on top may seem just for decorating purposes but what it does is stops the pie to harden on the top keeping in soft and airy.

Of course, the swirls of whipped cream and fresh berries are for pretty looks. No denying there.

Ingredients

    Crust

  • 25 Oreo cookies
  • 1/3 cup butter, diced
  • Ganache

  • 4 oz baking chocolate, roughly chopped (semi-sweet or unsweetened, whatever you prefer)
  • 1/3 cup heavy cream
  • 1 1/2 cups to 2 cups fresh strawberries, hulled
  • Filling

  • 1 tablespoon butter
  • 3 oz unsweetened baking chocolate, roughly chopped
  • 8 oz cream cheese, diced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup Imperial Sugar powder sugar
  • 1 cup heavy cream
  • 1/2 oz grated chocolate

Instructions

    Homemade oreo crust

  1. Place the Oreo cookie and 1/3 cup butter into a food processor. Pulse until fine crumbs form.
  2. Place the crumb mixture into a 9" pie pan with removable bottom and with your fingers press onto the bottom and the sides evenly.
  3. Refrigerate for 30 minutes.
  4. Meanwhile start on the chocolate filling.

  5. Add about 3/4" water to a saucepan and bring to a boil over medium flame.
  6. Place the chocolate and butter into a heatproof bowl and set on top of the hot water. Make sure the bowl does not touch the water.
  7. Cook the chocolate and butter stirring occasionally, until melted.
  8. Add in the diced cream cheese and continue to stir until the cheese melts and blends with the chocolate forming a smooth, silky mixture.
  9. Remove from the heat and quickly stir in the lemon juice.
  10. Once the lemon juice is mixed in, add the powdered sugar and stir to combine.
  11. Cool the chocolate filling in the fridge for 20-30 minutes.
  12. Make the ganache

  13. In a heatproof bowl add the chocolate and heavy cream. You can either melt the chocolate by cooking it on top of a saucepan with hot water or by microwaving it for about 90 seconds, stopping to stir every 20-30 seconds.
  14. Pour the ganache over the Oreo crust and arrange the strawberries. Refrigerate for just 5 more minutes.
  15. While the ganache is setting, finish the chocolate filling.

  16. In a chilled bowl add the heavy cream. With a hand whisk or a hand held mixer with the whisk attachment on, whip the cream until firm peaks form.
  17. With a spatula, gently fold into the chilled chocolate mixture.
  18. Spoon the chocolate filling over the strawberries and level the top.
  19. Scatter grated chocolate all over the pie and chill for at least 4 hours before cutting into slices.
  20. To decorate, you can make swirls of whipped cream and fresh strawberries.
